I have been truly blessed to be able to compete on a global stage in my career. As I started in this business, I looked up to my mentors and their mentors as well. Paul Bocuse was absolutely at the pinnacle for Fernand Guiterez and Jean Banchet. They felt that this was a competition of quality and reflection on French classic cuisine. The experience changed me, from a cooking ability to performing under pressure.
